Turkey Recipes

Chili, Turkey: serves 6 - 8

1.7 lbs. ground turkey

15 oz. black beans

14.5 oz. can diced tomatoes

6 oz. tomato paste

12 oz. can of vegetable juice or tomato juice

24 oz. chicken stock

1/2 cup brown sugar

1/2 tsp. oregano

1 green pepper, small diced

1 onion peeled, small diced

1 tsp. minced garlic

3 T. - 5 T. chili powder

1 tsp. dried mustard

2 tsp. salt

1. brown ground turkey, remove

2. sautee onions and green peppers

3. deglaze with vegetable juice

4. combine, meat and vegetables, stock, chili powder

5. BTB and reduce to simmer

6. add beans, and remaining spices, tomato products

7. skim any impurities that float to the surface & any oil

 

Meatballs, Turkey: yields 16 1 oz. meatballs

1 lb. ground turkey

1 each whole egg

2 oz. seasoned bread crumbs

1/8 tsp. ground mustard

1 oz. ketchup

1/2 oz. steak sauce

1/8 tsp. garlic powder

1/8 tsp. black pepper

1. in a bowl, combine all ingredients and mix thoroughly

2. form into 1 oz. balls

3. bake at 350 for 10 - 15 minutes or until 165 degrees

 

Meatloaf, Turkey: serves 6 - 8

2.5 lb. ground turkey

3 each whole egg

6 oz. seasoned bread crumbs

1/2 tsp. ground mustard

3 oz. ketchup

1 oz. steak sauce

1/2 tsp. garlic powder

1/2 tsp. black pepper

1. in a bowl, combine all ingredients and mix thoroughly

2. spray a 5 X 9 loaf pan with pan relief, or brush with oil

3. push meat mixture into the corners of the pan and

even out

4. bake at 350 for 30 - 40 minutes or until temperature

reaches 155 degrees.

 

Turkey with Broccoli, Cheddar, Eggnoodles: serves 4

1 lb. roasted turkey breast (or white and dark meat)

3 cups broccoli florettes

23 cups raw egg noodles, cook

1 cup bread croutons

Sauce

8 oz. milk heat slowly (never boil milk)

8 oz. light cream, 1/2 and 1/2 or heavy cream heat

slowly

1/8 tsp ground garlic

s & p to taste

2 oz. white roux

6 oz. grated cheddar

1. thicken hot dairy with roux,

2. add cheddar cheese

3. stir

4. add broccoli, diced turkey

5. in a bowl, toss step4 with cooked egg noodles

6. place in buttered casserole dish

7. top with croutons

8. bake at 350 for 25 - 35 minutes until crispy top
