Brussel Sprout Scramble

Sauteed brussel sprouts with scrambled egg

  • 4 cups brussel sprouts stem cut, then cut in 1/2
  • 1.5 oz oil extra virgin olive oil, or vegetable oil
  • .5 t salt
  • .5 t garlic granulated
  • 2.5 oz onion diced
  • .5 t pepper table ground


  • In saute pan heat oil, medium high heat
    brussel sprout scramble
  • Saute onion 2 minutes, season with pinch salt and garlic, pepper mill
  • Add Brussel sprouts, stir, season with salt, pepper mill
  • Reduce heat to medium, cover with lid, 4 minutes
  • Uncover cook until Brussel sprouts are golden brown and tender
  • Add eggs, stir, cover reduce heat to medium low
  • 2 - 3 minutes, stir
