Roast Turkey

Roast Turkey with this Orange Thyme Brine

Ingredients

  • 1 each 18 - 22 lbs Turkey Wash inside and out
  • 3 quarts orange Thyme brine see recipe
  • S&P Season Bird

Instructions

  • Set Turkey in a roasting pot large enough to hold the turkey, soak in Orange Thyme Brine overnight
    Roast Turkey in Roasting pan, on the rack, at 325 in conventional oven, covered for 4.5 hours, basting every 30 minutes with 2 quarts of brine placed on the bottom of roasting pan.
    Remove lid or foil continue to cook uncovered for 1.5 hours for color, and internal temperature reaches 165 degrees.

Orange Thyme Brine

Ingredients

  • 2 quart of Poultry stock chicken or turkey
  • 16 oz of Orange juice
  • 4 oz. Lemon Juice
  • 2 – oz. of Fresh Thyme
  • 1- pint Cider Vinegar
  • 1- pint water
  • ½ cup sugar
  • ½ cup salt if using a fresh Turkey omit if Turkey is frozen or containing brine solution

Instructions

  • Heat Water to a boil, dissolve sugar and salt combine with all other ingredients. Chill to below 40 before brining Poultry

 

Sweet Corn Bread Stuffing

Corn Bread Stuffing

a classic cornbread stuffing, sweet from the corn and savory from the bread.  This goes well with sausage or stuffed inside the bird and cooked inside the bird

Ingredients

  • 1/2 lb of cubed bread toast in the oven at 250 for 15 – 20 minutes until dry and toasty
  • 8 oz. of Cubed Corn Bread or corn muffins
  • 2 stalks celery peeled cut, small dice, see knife cuts
  • 1 small onion peeled cut, small dice, see knife cuts
  • 2 tsp. poultry seasoning
  • 1 stick butter salted or unsalted
  • Salt and pepper to taste
  • 1 cup Chicken Stock

Instructions

  • In skillet melt butter and sautee onions and celery until tender
  • Add toasted bread cubes, toss together
  • Add slowly chicken stock until desired consistency. (some like “flaky” stuffing utilizing less stock, some like it more densely moist., go with your preference)
  • Bake in a casserole dish at 350 for 30 – 40 minutes

1/2 lb of cubed bread, toast in the oven at 250 for 15 – 20 minutes until dry and toasty,

  • option double bread remove cornbread

8 oz. of Cubed Corn Bread or corn muffins

    2 stalks celery, peeled cut, small dice, see knife cuts

      1 small onion, peeled cut, small dice, see knife cuts

        2 tsp. poultry seasoning

          8 oz. of your favorite sausage, cooked, diced remove from pan, reserve fat and use in place of butter

            Salt and pepper to taste

              1 cup chicken stock

                • Add toasted bread cubes, toss together

                Classic Yukon gold flavor in a mashed potato

                • 8 lbs. yukon gold potatoes peeled
                • 1 cup 1/2 and 1/2

                Instructions

                • In a large stock pot bring water covered over peeled cubed potatoes to a boil
                  Cook until tender, pierce with a fork, if slight to no resistance it is cooked.
                  Remove from stove, drain the potatoes into a colander. return potatoes to the pot, add cream, butter, salt and pepper, heat slightly.
                  Mash, taste, adjust seasonings, serve

                • 1/2 cup garlic cloves, peeled
                • 1 pnt oil/olive oil blend 90/10

                Instructions

                • Preheat oven to 350 degrees
                  Place garlic cloves in oil, place in a pan you can use in the oven.
                  Roast Garlic in oil in the oven for 45 – 70 minutes. Oil will be turning and garlic will darken in color. This can be done ahead.
                  Save oil, remove garlic, use garlic cloves as part of your favorite mashed potato recipe

                • 1 T. Lemon Juice
                • 3 T. Butter

                • 2 cups white granulated sugar you can use 1 cup if you prefer less sweet
