Salsa Verde

This unique dish made from roasted tomatillos, lime, cilantro, jalapenos with a touch of garlic and onion is fresh and a great compliment to burritos and chimichangas and similar dishes looking for fresh salsa.

  • 1 lb Tomatillos peeled, cored, cut in 1/4's
  • 1 T Garlic whole cloves
  • 1 tsp Jalapenos chopped
  • 1 T Vegetable oil
  • 1 dash Red Pepper Flake
  • 4 T Cilantro chopped
  • 1 oz Onion chopped
  • 1/2 tsp Lime Juice


  • Toss all ingredients in a bowl with oil, except cilantro and lime juice
    tomatillos in stages
  • Roast at 375, on a cookie sheet or sheet pan, until lightly browned (30 min convectional, 60 minutes Conventional)
  • Cool ingredients
  • Add remaining ingredients and then, In a blender, pulse until paste/sauce like, or in a compacted bowl use wand blender or immersion blender to get paste/sauce like.  
  • Serve
