Salsa Verde
This unique dish made from roasted tomatillos, lime, cilantro, jalapenos with a touch of garlic and onion is fresh and a great compliment to burritos and chimichangas and similar dishes looking for fresh salsa.

- 1 lb Tomatillos peeled, cored, cut in 1/4's
- 1 T Garlic whole cloves
- 1 tsp Jalapenos chopped
- 1 T Vegetable oil
- 1 dash Red Pepper Flake
- 4 T Cilantro chopped
- 1 oz Onion chopped
- 1/2 tsp Lime Juice
Toss all ingredients in a bowl with oil, except cilantro and lime juice
Roast at 375, on a cookie sheet or sheet pan, until lightly browned (30 min convectional, 60 minutes Conventional)
Cool ingredients
Add remaining ingredients and then, In a blender, pulse until paste/sauce like, or in a compacted bowl use wand blender or immersion blender to get paste/sauce like.
