- 1 lb beef ground, cooked with southwest seasoning, see recipe or use taco seasoning
- 2 T seasoning taco
- 1 cup rice rice using southwestern rice recipe
- 6 oz cheddar cheese shredded
- 5 oz beans kidney or pinto beans
- 2.5 oz peppers cut into strips, saute with onions until tender
- 2.5 oz onions cut into strips
- 4 each tortillas 10 inch, flour
On tortilla place 2 oz of rice in a row down the center
mix cheese with peppers and onion mixture that was previously cooked, add when not hot
divide cheese peppers and onions into 4 even portions, place one portion evenly on top of rice
place 1 tablespoon of beans on top of cheese layer
place 4 oz of seasoned precooked, drained beef on top of bean layer
fold ends of tortilla over the items, fold end closest to you over the top away from you, keep ends tucked in, roll burrito all the way to complete closure
place on oiled medium high heat skillet for 2 - 3 minutes to brown exterior, if items were hot going in then once all sides are browned you can serve the item
