Instructions
blend all ingredients thoroughly
marinate for 2- 4 hours
remove from marinade and let rest on smoker rack in the refrigerator for 2 - 6 hours. Develop pellicle slim which gives the fish chew once smoked
smoke for 3 - 5 hours @170 degrees. This recipe was done for 4 hours
