Ingredients

  • 2/3 cup sugar
  • 1/4 cup salt
  • 1/4 cup soy sauce
  • 1/8 tsp cayenne
  • 3 lbs fish king fish

Instructions

  • blend all ingredients thoroughly
  • marinate for 2- 4 hours
  • remove from marinade and let rest on smoker rack in the refrigerator for 2 - 6 hours. Develop pellicle slim which gives the fish chew once smoked
  • smoke for 3 - 5 hours @170 degrees. This recipe was done for 4 hours
