Ingredients
- 2/3 cup sugar
- 1/4 cup salt
- 1/4 cup soy sauce
- 1/8 tsp cayenne
- 3 lbs fish king fish
Instructions
- blend all ingredients thoroughly
- marinate for 2- 4 hours
- remove from marinade and let rest on smoker rack in the refrigerator for 2 – 6 hours. Develop pellicle slim which gives the fish chew once smoked
- smoke for 3 – 5 hours @170 degrees. This recipe was done for 4 hours
