Ingredients
- 2/3 cup sugar
- 1/4 cup salt
- 1/4 cup soy sauce
- 1/8 tsp cayenne
- 3 lbs fish king fish
Instructions
- blend all ingredients thoroughly
- marinate for 2- 4 hours
- remove from marinade and let rest on smoker rack in the refrigerator for 2 - 6 hours. Develop pellicle slim which gives the fish chew once smoked
- smoke for 3 - 5 hours @170 degrees. This recipe was done for 4 hours

- 12 oz fish king fish smoked, mash with fork in a bowl See smoked kingfish recipe
- 3/4 cup sour cream
- 1/3 cup mayonaise
- 1/3 cup red onion minced
- 1 tsp black pepper fine ground
- 1 tsp garlic powder
- 24 each cracker triscuit
- 2 oz pepper red, chili or datil cut into slivers
Instructions
- combine all in a bowl, mix thoroughly
- top on cracker
- garnish with sliver or red pepper, or chili pepper or datil pepper
