Ingredients

  • 2/3 cup sugar
  • 1/4 cup salt
  • 1/4 cup soy sauce
  • 1/8 tsp cayenne
  • 3 lbs fish king fish

Instructions

  • blend all ingredients thoroughly
  • marinate for 2- 4 hours
  • remove from marinade and let rest on smoker rack in the refrigerator for 2 - 6 hours. Develop pellicle slim which gives the fish chew once smoked
  • smoke for 3 - 5 hours @170 degrees. This recipe was done for 4 hours

Ingredients

  • 12 oz fish king fish smoked, mash with fork in a bowl See smoked kingfish recipe
  • 3/4 cup sour cream
  • 1/3 cup mayonaise
  • 1/3 cup red onion minced
  • 1 tsp black pepper fine ground
  • 1 tsp garlic powder
  • 24 each cracker triscuit
  • 2 oz pepper red, chili or datil cut into slivers

Instructions

  • combine all in a bowl, mix thoroughly
    kingfish
  • top on cracker
  • garnish with sliver or red pepper, or chili pepper or datil pepper
