  • 2.5 oz peppers red, diced small
  • 2.5 oz onions diced small
  • 1 tbsp oil
  • 12 oz red potatoes diced, cooked to tender
  • 5 oz beans kidney or pinto, canned or previously cooked
  • 6 oz salsa
  • 4 each tortillas 10 inch
  • salt
  • pepper

Instructions

  • saute peppers and onions with Brussels sprouts in oil with salt and pepper, until lightly browned
